Christmas Catering on the Space Coast: How to Plan Christmas Eve and Christmas Day Dinner in Brevard County

Christmas catering is a service in which a professional caterer plans, prepares, and delivers or serves a holiday meal for Christmas Eve or Christmas Day, so the host can spend the holiday with family instead of in the kitchen. On the Space Coast, where relatives often fly in and the weather rarely cooperates with a traditional cold-weather menu, the smoothest holidays start with a decision made in the fall.

Christmas Eve 2026 falls on a Thursday and Christmas Day on a Friday. That makes it a long holiday weekend, with gatherings stacked across several days, and caterers fill their calendars accordingly.

What are your Christmas catering options?

The right format depends on how much cooking you want to do and how many people are coming. After years of catering holiday gatherings across Melbourne, Viera, Satellite Beach, and the rest of Brevard County, I group the choices into four styles.

Format

Best for

What you do

Drop-off meal

8 to 30 guests at home

Heat, set out, and serve

Full holiday buffet

25 to 100 guests

Greet guests while staff run the line

Plated or family-style dinner

10 to 50 guests

Sit down and be served

Hybrid (we cook the mains, you add family favorites)

Households with beloved recipes

Handle only the dishes that matter most

The hybrid option is the one many families overlook. If Grandma's stuffing is non-negotiable, keep it, and let a caterer handle the roast, the sides, and the dessert table.

What should a Christmas dinner menu include?

A good holiday menu balances tradition with a few dishes that make the day feel special. Florida hosts also have to think about the temperature, since a 78-degree Christmas Day is not a good fit for every heavy winter dish.

•           A centerpiece protein such as a carved roast, glazed ham, or herb-roasted turkey, with a lighter seafood option for guests who want it.

•           Two or three sides that travel and reheat well, from roasted vegetables to a classic potato dish.

•           A fresh salad or citrus-forward starter that takes advantage of Florida produce.

•           Bread, sauces, and gravies packaged separately so they can be warmed at the last minute.

•           A dessert option that does not need an oven on the day.

•           Clearly labeled dishes for guests with allergies or dietary needs.

When you build the list, start with your guest count and the people who will actually be eating. Our article on matching dishes to your guest list walks through that process, and it applies as much to a family table as to a corporate event.

How much food should you order for a holiday dinner?

Holiday meals run larger than ordinary dinners because guests expect seconds and leftovers. As a rule of thumb, I plan a generous main portion per guest, then add extra sides so the table never looks sparse. Tell your caterer how many adults and children are attending, and whether you want enough left over for the next day. Planning leftovers on purpose is better than guessing.

How do you keep a holiday meal safe?

Food safety matters more at a holiday table, because dishes sit out longer. The U.S. Department of Agriculture's Food Safety and Inspection Service explains that bacteria multiply fastest between 40 and 140 degrees Fahrenheit, known as the "Danger Zone," and that perishable food should not sit out for more than 2 hours (USDA FSIS, Danger Zone). Keep hot dishes hot and cold dishes cold, and serve in smaller trays that you refresh instead of one large platter.

The same agency advises refrigerating leftovers within 2 hours of cooking, or within 1 hour if the room is hotter than 90 degrees, then eating them within 3 to 4 days and reheating them to 165 degrees Fahrenheit (USDA FSIS, Leftovers and Food Safety). If your Christmas dinner runs into the afternoon, set a reminder to pack the leftovers before the afternoon turns into evening.

When should you book Christmas catering in Brevard County?

Book as soon as you know your date and guest count, ideally in October or early November. Christmas Eve and Christmas Day compete with December office parties and New Year's Eve events, and the most requested menus and service times go first. Booking early also gives you time to confirm dietary needs and finalize pickup or delivery windows.

Before you commit, compare what each quote includes: the menu, serving equipment, delivery, staffing, and cleanup. Our guide on what to look for in a Melbourne caterer lists the questions worth asking.

Frequently asked questions

How far in advance should I book Christmas catering on the Space Coast? Start in October or early November. Holiday dates are limited, and booking early gives you the best choice of menus, delivery windows, and service styles.

Can a caterer deliver Christmas dinner to my home in Brevard County? Many caterers offer drop-off meals that arrive ready to heat and serve, along with warming instructions. Confirm the delivery window, reheating steps, and what equipment is included when you book.

How much food do I need for a Christmas dinner party? Plan a generous main portion for every guest and add enough sides that seconds are easy. Share your adult and child counts with your caterer, and say whether you want leftovers.

How long can Christmas dinner sit out safely? Perishable food should not sit out more than 2 hours, or more than 1 hour when the room is above 90 degrees. Keep hot dishes at 140 degrees Fahrenheit or higher and cold dishes at 40 degrees or lower.

Can I combine catered dishes with my own family recipes? Yes. A hybrid meal, where the caterer handles the main dishes and you contribute a few signature recipes, is a popular way to keep traditions without doing all the work.
